Ingredients:
4 bone-in, skin-on chicken thighs
1 tablespoon olive oil
Salt and pepper to taste
1 small onion, finely chopped
2 cloves garlic, minced
200g mushrooms (such as button or cremini), sliced
1/2 cup chicken broth
1/4 cup heavy cream
1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions:
Preheat your oven to 375°F (190°C).
Season the chicken thighs generously with salt and pepper.
Heat the olive oil in an oven-safe skillet over medium-high heat. Once hot, add the chicken thighs skin side down. Cook for about 5 minutes, or until the skin is golden brown and crispy. Flip the chicken thighs and cook for another 3 minutes. Remove the chicken from the skillet and set aside on a plate.
